you can use m & m's for a lot of the probability and statistics. The proportion of each color is set (I don't remember the distribution of each color, but I am sure you can google it). You can use it to demonstrate probability, proportions, binomial distribution, etc. You can use a coin or a die to introduce central limit theorem. If your class is large, you can create human histograms measuring their height and then take a picture of it from a higher point, so that the kids can see the shape. There are whole books on activities for non-AP stat courses, shouldn't be hard to find on the web.
