    Most common method would probably be maximum likelihood estimation.
    I don't have emotions and sometimes that makes me very sad.

    You could also use Bayesian methods.

    Or just guess. Or use a method that minimizes your risk for some loss function that is of interest to you.

    No! There are no references to any litterature that deals with parameter estimation for multinomial logistic regression models.
